- 1 (15-ounce) can black beans, drained and rinsed
- 1/2 cup rolled oats
- 2 cloves garlic, minced
- 1/2 small onion, finely chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1–2 chipotle peppers in adobo, minced
- 1/2 cup mayonnaise
- 1 tablespoon lime juice
- 4 large flour tortillas
- Lettuce leaves
- 1 large tomato, sliced
- Red onion, thinly sliced
Instructions
- Heat a non-stick skillet over medium heat.
- In a food processor, pulse black beans, oats, garlic, onion, cumin, chili powder, salt, and pepper until well combined but slightly chunky.
- Lightly oil the skillet or use cooking spray.
- Shape the mixture into 4 patties and chill for 10–15 minutes.
- Cook patties for 4–5 minutes on each side until golden brown.
- In a small bowl, mix mayonnaise, chipotle peppers, and lime juice to create the aioli.
- Toast tortillas lightly in the skillet for flexibility.
- Spread chipotle aioli on each tortilla and layer with lettuce, tomato, onion, and a black bean patty.
- Wrap tightly and serve immediately.
