These Bite-Sized Twix Cups are a fun and healthier homemade twist on the classic candy bar. Featuring a buttery shortbread base, gooey date caramel, and rich chocolate topping, they’re perfect for satisfying sweet cravings in just one bite.

- For the Shortbread Base:
- 1 cup almond flour
- 2 tablespoons coconut oil, melted
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- Pinch of salt
- For the Caramel Layer:
- 1 cup Medjool dates, pitted and soaked if dry
- 2 tablespoons almond butter or peanut butter
- 1 tablespoon coconut oil
- 1/2 teaspoon vanilla extract
- Pinch of salt
- For the Chocolate Topping:
- 1/2 cup dark chocolate chips
- 1 teaspoon coconut oil
Instructions
- Preheat oven to 350°F (175°C). Line a mini muffin tin with liners or lightly grease it.
- In a bowl, mix almond flour, melted coconut oil, maple syrup, vanilla, and salt until a dough forms. Press about 1 teaspoon of dough into each mini muffin cup to form the base.
- Bake for 8–10 minutes or until lightly golden. Let cool completely.
- In a food processor, blend dates, almond butter, coconut oil, vanilla, and salt until smooth and creamy.
- Spoon about 1 teaspoon of the caramel mixture over each cooled shortbread base and gently press down to spread evenly.
- Melt chocolate chips with coconut oil in the microwave or a double boiler until smooth.
- Top each cup with melted chocolate, spreading it evenly over the caramel layer.
- Place in the fridge or freezer for 20–30 minutes until set. Store in the fridge for up to a week.
Notes
- Use silicone mini muffin molds for easy release.
- Try adding a sprinkle of flaky sea salt on top for a sweet-salty finish.
- You can substitute peanut butter or tahini for almond butter depending on taste preference.
