Description

These Bite-Sized Twix Cups are a fun and healthier homemade twist on the classic candy bar. Featuring a buttery shortbread base, gooey date caramel, and rich chocolate topping, they’re perfect for satisfying sweet cravings in just one bite.


Ingredients

  • For the Shortbread Base:
  • 1 cup almond flour
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • For the Caramel Layer:
  • 1 cup Medjool dates, pitted and soaked if dry
  • 2 tablespoons almond butter or peanut butter
  • 1 tablespoon coconut oil
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • For the Chocolate Topping:
  • 1/2 cup dark chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Preheat oven to 350°F (175°C). Line a mini muffin tin with liners or lightly grease it.
  2. In a bowl, mix almond flour, melted coconut oil, maple syrup, vanilla, and salt until a dough forms. Press about 1 teaspoon of dough into each mini muffin cup to form the base.
  3. Bake for 8–10 minutes or until lightly golden. Let cool completely.
  4. In a food processor, blend dates, almond butter, coconut oil, vanilla, and salt until smooth and creamy.
  5. Spoon about 1 teaspoon of the caramel mixture over each cooled shortbread base and gently press down to spread evenly.
  6. Melt chocolate chips with coconut oil in the microwave or a double boiler until smooth.
  7. Top each cup with melted chocolate, spreading it evenly over the caramel layer.
  8. Place in the fridge or freezer for 20–30 minutes until set. Store in the fridge for up to a week.

Notes

  • Use silicone mini muffin molds for easy release.
  • Try adding a sprinkle of flaky sea salt on top for a sweet-salty finish.
  • You can substitute peanut butter or tahini for almond butter depending on taste preference.
