Description

Soft and fluffy cinnamon rolls swirled with brown sugar, cinnamon, and creamy Biscoff cookie butter, then topped with a rich cookie butter glaze that melts into every warm spiral.

  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm milk
  • 1/2 cup unsalted butter, melted (for dough)
  • 1/4 cup unsalted butter, softened (for filling)
  • 2 large eggs
  • 1 teaspoon salt
  • 3/4 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 3/4 cup Biscoff cookie butter (for filling)
  • 1/2 cup Biscoff cookie butter (for frosting)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F and lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine warm milk and active dry yeast. Let sit for 5 minutes until slightly foamy. Stir in granulated sugar, melted butter, eggs, and salt. Gradually add flour and mix until a soft dough forms. Knead for 8 to 10 minutes until smooth.
  3. Place the dough in a greased bowl, cover, and let rise for about 1 hour or until doubled in size.
  4. Roll dough into a 16×12 inch rectangle. Spread softened butter over the surface, then sprinkle brown sugar and ground cinnamon evenly. Spread 3/4 cup Biscoff cookie butter over the top. Roll tightly and slice into 12 rolls. Arrange in the prepared baking dish and let rise for 30 minutes.
  5. Bake for 25 minutes or until lightly golden and cooked through.
  6. Mix 1/2 cup Biscoff cookie butter, powdered sugar, and vanilla extract until smooth. Spread over warm rolls so it melts slightly before serving.

Notes

  • Make sure the milk is warm, not hot, to properly activate the yeast.
  • Use dental floss to slice the dough cleanly without flattening the rolls.
  • Cover loosely with foil if the tops brown too quickly while baking.
  • Rolls can be assembled the night before and baked fresh in the morning.
