- 1/4 cup granulated sugar
- 2 1/4 teaspoons active dry yeast
- 1 cup warm milk
- 1/2 cup unsalted butter, melted (for dough)
- 1/4 cup unsalted butter, softened (for filling)
- 2 large eggs
- 1 teaspoon salt
- 3/4 cup brown sugar
- 1 tablespoon ground cinnamon
- 3/4 cup Biscoff cookie butter (for filling)
- 1/2 cup Biscoff cookie butter (for frosting)
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F and lightly grease a 9×13 inch baking dish.
- In a large bowl, combine warm milk and active dry yeast. Let sit for 5 minutes until slightly foamy. Stir in granulated sugar, melted butter, eggs, and salt. Gradually add flour and mix until a soft dough forms. Knead for 8 to 10 minutes until smooth.
- Place the dough in a greased bowl, cover, and let rise for about 1 hour or until doubled in size.
- Roll dough into a 16×12 inch rectangle. Spread softened butter over the surface, then sprinkle brown sugar and ground cinnamon evenly. Spread 3/4 cup Biscoff cookie butter over the top. Roll tightly and slice into 12 rolls. Arrange in the prepared baking dish and let rise for 30 minutes.
- Bake for 25 minutes or until lightly golden and cooked through.
- Mix 1/2 cup Biscoff cookie butter, powdered sugar, and vanilla extract until smooth. Spread over warm rolls so it melts slightly before serving.
Notes
- Make sure the milk is warm, not hot, to properly activate the yeast.
- Use dental floss to slice the dough cleanly without flattening the rolls.
- Cover loosely with foil if the tops brown too quickly while baking.
- Rolls can be assembled the night before and baked fresh in the morning.
