- 3 cups rolled oats
- 1/2 cup maple syrup
- 1/4 cup light brown sugar
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1/3 cup coconut oil, melted
- 2 teaspoons vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.
- In a large bowl, mix oats, brown sugar, cinnamon, and salt.
- In another bowl, whisk together melted coconut oil, maple syrup, and vanilla extract.
- Pour wet ingredients over the dry and stir until everything is well coated.
- Spread mixture evenly on the prepared baking sheet and press down firmly with a spatula.
- Bake for 25 to 30 minutes without stirring, rotating the pan halfway through.
- Remove from oven and let cool completely on the pan.
- Sprinkle chocolate chips over the granola while still warm so they melt slightly.
- Once fully cooled, break into big chunks and store in an airtight container.
Notes
- Pressing the mixture down firmly before baking helps form big clusters.
- Don’t stir while baking or cooling for best clumping.
- Let cool completely before breaking apart to keep clusters intact.
- Store in a cool, dry place for up to 2 weeks.
