Description

Chunky, sweet, and perfectly spiced, this maple cinnamon chocolate chip granola is packed with giant crunchy clusters and melty chocolate. A delicious snack or breakfast topper you’ll keep coming back to.


Ingredients

  • 3 cups rolled oats
  • 1/2 cup maple syrup
  • 1/4 cup light brown sugar
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/3 cup coconut oil, melted
  • 2 teaspoons vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, mix oats, brown sugar, cinnamon, and salt.
  3. In another bowl, whisk together melted coconut oil, maple syrup, and vanilla extract.
  4. Pour wet ingredients over the dry and stir until everything is well coated.
  5. Spread mixture evenly on the prepared baking sheet and press down firmly with a spatula.
  6. Bake for 25 to 30 minutes without stirring, rotating the pan halfway through.
  7. Remove from oven and let cool completely on the pan.
  8. Sprinkle chocolate chips over the granola while still warm so they melt slightly.
  9. Once fully cooled, break into big chunks and store in an airtight container.

Notes

  • Pressing the mixture down firmly before baking helps form big clusters.
  • Don’t stir while baking or cooling for best clumping.
  • Let cool completely before breaking apart to keep clusters intact.
  • Store in a cool, dry place for up to 2 weeks.
