- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup sour cream
- 2 cups fresh strawberries, sliced
- 1/2 cup strawberry jam
- 1 cup crushed cornflakes or crispy cereal for crunch topping
- Optional: whipped cream for serving
Instructions
- Preheat oven to 325°F (160°C). Combine graham cracker crumbs, sugar, and melted butter. Press mixture firmly into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese until smooth. Gradually add sugar and vanilla, mixing well.
- Add eggs one at a time, beating after each addition until just combined.
- Mix in sour cream until smooth.
- Pour batter over crust in the pan.
- Bake for 50–60 minutes until the center is set but still slightly jiggly.
- Cool to room temperature, then refrigerate at least 4 hours or overnight.
- Before serving, spread strawberry jam over the cheesecake and top with sliced fresh strawberries and crushed cornflakes for crunch.
- Serve with whipped cream if desired.
