Description

Buttery mixed berry crumb bars with a tender oat crust, a jammy berry filling, and a golden crumble topping. Easy to slice, easy to share, and packed with bright fruity flavor.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 3/4 cup light brown sugar, packed
  • 1/2 cup granulated sugar, divided
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1 cup blueberries, fresh or frozen
  • 1 cup raspberries, fresh or frozen
  • 1 cup blackberries, halved if large
  • 1 cup strawberries, hulled and diced
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, whisk together the flour, oats, brown sugar, 1/4 cup of the granulated sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture is crumbly, then mix in the egg until the crumbs begin to hold together when pressed.
  4. Press about two-thirds of the crumb mixture firmly into the bottom of the prepared pan to form the crust.
  5. In a medium bowl, gently toss the blueberries, raspberries, blackberries, strawberries, remaining 1/4 cup granulated sugar, cornstarch, lemon juice, and lemon zest.
  6. Spoon the berry mixture evenly over the crust.
  7. Sprinkle the remaining crumb mixture over the top.
  8. Bake for 42 to 48 minutes, until the topping is lightly golden and the berry filling is bubbling around the edges.
  9. Cool completely in the pan, then chill for at least 1 hour before lifting out and slicing into 12 bars.

Notes

  • Use frozen berries straight from the freezer, do not thaw first.
  • Let the bars cool fully before slicing for the cleanest shape.
  • Store in an airtight container in the refrigerator for up to 5 days.
  • Freeze individual bars for up to 2 months and thaw before serving.
