Description

  • 1 pound beef sirloin, thinly sliced
  • 12 ounces egg noodles
  • 8 ounces mushrooms, sliced
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 3/4 cup sour cream
  • 1 teaspoon Dijon mustard
  • 2 tablespoons butter
  • 1 tablespoon all purpose flour
  • 2 tablespoons fresh parsley, chopped
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil. Cook the egg noodles according to package instructions until tender, then drain and set aside.
  2. Season the sliced beef with salt and black pepper.
  3. In a large skillet over medium high heat, melt the butter. Add the diced onion and sliced mushrooms and cook until softened and lightly golden.
  4. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  5. Sprinkle the flour over the vegetables and stir well to coat.
  6. Pour in the beef broth and Dijon mustard, stirring constantly until the sauce begins to thicken.
  7. Add the seasoned beef strips to the skillet and simmer for about 5 minutes until the beef is cooked through and tender.
  8. Reduce the heat to low and stir in the sour cream until the sauce becomes smooth and creamy.
  9. Add the cooked egg noodles to the skillet and gently toss until the noodles are evenly coated with the sauce.
  10. Sprinkle chopped parsley on top and serve warm.

Notes

  • Slice the beef thinly across the grain to keep it tender.
  • Do not add sour cream over high heat because it may curdle.
  • If the sauce becomes too thick, add a small splash of beef broth to loosen it.
