- 12 ounces egg noodles
- 8 ounces mushrooms, sliced
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 cup beef broth
- 3/4 cup sour cream
- 1 teaspoon Dijon mustard
- 2 tablespoons butter
- 1 tablespoon all purpose flour
- 2 tablespoons fresh parsley, chopped
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil. Cook the egg noodles according to package instructions until tender, then drain and set aside.
- Season the sliced beef with salt and black pepper.
- In a large skillet over medium high heat, melt the butter. Add the diced onion and sliced mushrooms and cook until softened and lightly golden.
- Stir in the minced garlic and cook for about 30 seconds until fragrant.
- Sprinkle the flour over the vegetables and stir well to coat.
- Pour in the beef broth and Dijon mustard, stirring constantly until the sauce begins to thicken.
- Add the seasoned beef strips to the skillet and simmer for about 5 minutes until the beef is cooked through and tender.
- Reduce the heat to low and stir in the sour cream until the sauce becomes smooth and creamy.
- Add the cooked egg noodles to the skillet and gently toss until the noodles are evenly coated with the sauce.
- Sprinkle chopped parsley on top and serve warm.
Notes
- Slice the beef thinly across the grain to keep it tender.
- Do not add sour cream over high heat because it may curdle.
- If the sauce becomes too thick, add a small splash of beef broth to loosen it.
