- 1 cup cold sparkling water (or club soda)
- Vegetable oil for frying

Instructions
- Pat the fish fillets dry with paper towels and cut into desired serving sizes. Set aside.
- In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, pepper, and paprika.
- Gradually whisk in the cold sparkling water until a smooth batter forms. Do not overmix; a few lumps are fine.
- Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
- Dip each fish fillet into the batter, allowing excess to drip off, and carefully place it into the hot oil.
- Fry the fish in batches for 4–6 minutes, turning halfway, until golden brown and cooked through.
- Remove the fried fish from the oil and drain on paper towels.
- Serve immediately with lemon wedges and your favorite dipping sauce.
