Description

  • 1 1/2 pounds white fish fillets (such as cod, haddock, or tilapia)
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika (optional)
  • 1 cup cold sparkling water (or club soda)
  • Vegetable oil for frying
  • Lemon wedges for serving

Instructions

  1. Pat the fish fillets dry with paper towels and cut into desired serving sizes. Set aside.
  2. In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, pepper, and paprika.
  3. Gradually whisk in the cold sparkling water until a smooth batter forms. Do not overmix; a few lumps are fine.
  4. Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
  5. Dip each fish fillet into the batter, allowing excess to drip off, and carefully place it into the hot oil.
  6. Fry the fish in batches for 4–6 minutes, turning halfway, until golden brown and cooked through.
  7. Remove the fried fish from the oil and drain on paper towels.
  8. Serve immediately with lemon wedges and your favorite dipping sauce.
