- 1 large ripe banana, mashed
- 1/2 cup creamy peanut butter
- 1 tablespoon honey or maple syrup
- 1 cup rolled oats
- 1/4 cup mini chocolate chips
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 1/2 cup melted chocolate (optional)
- 2 tablespoons crushed peanuts (optional)
Instructions
- In a large bowl, mash the banana until smooth.
- Stir in peanut butter, honey, vanilla extract, and salt until fully combined.
- Add rolled oats and chocolate chips. Mix until everything is evenly incorporated.
- Line a plate or baking sheet with parchment paper.
- Use a spoon or scoop to form mixture into 1-inch balls and place them on the sheet.
- Chill in the fridge for at least 30 minutes or freeze for 15 minutes.
- If desired, dip each ball in melted chocolate and sprinkle with crushed peanuts.
- Return to fridge to set chocolate before serving.
Notes
- Use very ripe bananas for best sweetness and texture.
- Wet your hands lightly when rolling to prevent sticking.
- Store in an airtight container in the fridge for up to 5 days or freeze for longer shelf life.
