Description

Ingredients

  • 3 medium ripe bananas, mashed
  • 1 and 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate, chopped or chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a separate large bowl, combine mashed bananas, melted butter, sugar, eggs, and vanilla extract. Mix until smooth.
  4. Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. To make the ganache, heat heavy cream in a small saucepan until just simmering. Pour over the chocolate and let sit for 2 minutes. Stir until smooth and glossy.
  9. Let the ganache cool slightly, then spread it over the cooled banana bread.
  10. Let the ganache set for 10 to 15 minutes before slicing and serving.
