- 3 medium ripe bananas, mashed
- 1 and 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate, chopped or chips
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a separate large bowl, combine mashed bananas, melted butter, sugar, eggs, and vanilla extract. Mix until smooth.
- Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- To make the ganache, heat heavy cream in a small saucepan until just simmering. Pour over the chocolate and let sit for 2 minutes. Stir until smooth and glossy.
- Let the ganache cool slightly, then spread it over the cooled banana bread.
- Let the ganache set for 10 to 15 minutes before slicing and serving.

- Use very ripe bananas with brown spots for the best flavor and texture.
- Let the bread cool completely before topping with ganache to avoid melting.
- You can make the ganache ahead and store it in the fridge, then gently reheat before using.
