Description

Baked Meatballs and Potatoes is a comforting one-pan dish featuring juicy, spiced meatballs nestled with golden potatoes, tomatoes, and peppers, all baked in a savory tomato sauce. A wholesome family meal full of Mediterranean flavors.


Ingredients

  • 1 lb ground beef
  • 1 yellow onion, grated and strained
  • 2 cloves garlic, minced
  • 1 egg
  • ½ cup breadcrumbs
  • 1 teaspoon kosher salt
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • ½ teaspoon paprika
  • 1 teaspoon sumac
  • ½ cup parsley, chopped
  • 3 yellow potatoes
  • 2 large tomatoes
  • 3 mini peppers

Sauce:

  • 2 tablespoons tomato paste
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1½ cups water

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, grated onion, garlic, egg, breadcrumbs, salt, oregano, cumin, paprika, sumac, and chopped parsley. Mix until well incorporated.
  3. Form the mixture into medium-sized meatballs and set aside.
  4. Slice the potatoes, tomatoes, and peppers into wedges or rounds.
  5. Arrange the sliced vegetables and meatballs alternately in a large baking dish.
  6. In a separate bowl, whisk together tomato paste, salt, pepper, olive oil, and water to make the sauce.
  7. Pour the sauce evenly over the meatballs and vegetables.
  8. Cover the dish with foil and bake for 40 minutes.
  9. Remove foil and bake an additional 15–20 minutes, until the top is lightly browned and the potatoes are tender.
  10. Serve hot, garnished with extra parsley if desired.

Notes

  • Grating and straining the onion prevents excess liquid in the meatball mixture.
  • Use a mix of red and yellow peppers for extra color and sweetness.
  • For a richer sauce, substitute part of the water with chicken or beef broth.
  • This dish pairs perfectly with rice or crusty bread to soak up the sauce.
