A luscious, creamy Baileys Chocolate Mint Pudding with rich chocolate flavor, a hint of Irish cream, and refreshing mint. Perfect as an indulgent dessert for any special occasion.

- 2 cups (480ml) whole milk
- 1/2 cup (120ml) Baileys Irish Cream with Mint
- 1/2 cup (100g) granulated sugar
- 1/4 cup (30g) unsweetened cocoa powder
- 1/4 cup (30g) cornstarch
- 1/4 tsp salt
- 4 oz (115g) semisweet chocolate, chopped
- 1 tsp peppermint extract
- 1 tbsp unsalted butter
- Whipped cream and chocolate shavings (optional, for topping)
Instructions
- In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
- Gradually whisk in milk and Baileys until smooth.
- Cook over medium heat, whisking constantly, until the mixture thickens and begins to boil, about 5-7 minutes.
- Remove from heat and stir in chopped chocolate, peppermint extract, and butter until melted and smooth.
- Pour pudding into individual serving dishes and let cool slightly. Cover with plastic wrap (touching the surface) to prevent a skin from forming.
- Chill for at least 2 hours before serving. Top with whipped cream and chocolate shavings if desired.
Notes
- You can adjust the mint flavor by adding more or less peppermint extract.
- Use high-quality chocolate for the best taste and texture.
- Can be made 1 day ahead and stored in the refrigerator.
