Description

A luscious, creamy Baileys Chocolate Mint Pudding with rich chocolate flavor, a hint of Irish cream, and refreshing mint. Perfect as an indulgent dessert for any special occasion.


Ingredients

  • 2 cups (480ml) whole milk
  • 1/2 cup (120ml) Baileys Irish Cream with Mint
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (30g) unsweetened cocoa powder
  • 1/4 cup (30g) cornstarch
  • 1/4 tsp salt
  • 4 oz (115g) semisweet chocolate, chopped
  • 1 tsp peppermint extract
  • 1 tbsp unsalted butter
  • Whipped cream and chocolate shavings (optional, for topping)

Instructions

  1. In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
  2. Gradually whisk in milk and Baileys until smooth.
  3. Cook over medium heat, whisking constantly, until the mixture thickens and begins to boil, about 5-7 minutes.
  4. Remove from heat and stir in chopped chocolate, peppermint extract, and butter until melted and smooth.
  5. Pour pudding into individual serving dishes and let cool slightly. Cover with plastic wrap (touching the surface) to prevent a skin from forming.
  6. Chill for at least 2 hours before serving. Top with whipped cream and chocolate shavings if desired.

Notes

  • You can adjust the mint flavor by adding more or less peppermint extract.
