- 1 1/2 cups heavy cream
- 1 (14 oz) can sweetened condensed milk
- 1/2 cup crushed pineapple (drained)
- 1/2 cup orange juice concentrate (thawed)
- 1/4 cup maraschino cherry juice
- 1/2 teaspoon coconut extract
- 1 tablespoon dark rum or 1/2 teaspoon rum extract (optional)
- 1/2 cup chopped maraschino cherries
- 1/2 cup shredded sweetened coconut (optional)
Instructions
- In a large bowl, whip the heavy cream until stiff peaks form.
- In another bowl, whisk together the sweetened condensed milk, crushed pineapple, orange juice concentrate, cherry juice, coconut extract, and rum or rum extract if using.
- Gently fold the whipped cream into the fruit mixture until well combined.
- Stir in chopped cherries and shredded coconut (if using).
- Pour the mixture into a loaf pan or airtight container and smooth the top.
- Freeze for at least 6 hours or overnight until firm.
Notes
- This is a no-churn recipe—no ice cream maker needed!
- Adjust cherry or pineapple quantities to taste.
- For a more authentic Bahama Mama flavor, use dark rum instead of extract.
