- 6 cups fresh kale, stems removed and torn into pieces
- 1 large ripe avocado, diced
- 1 cup canned chickpeas, rinsed and drained
- 1/3 cup shaved parmesan cheese
- 1 cup croutons
- 2 tablespoons lemon juice
- 1 garlic clove, finely grated
- 1 teaspoon Dijon mustard
- 1/4 cup olive oil
- 1/3 cup Caesar dressing
- 1/4 teaspoon salt
- Black pepper to taste
Instructions
- Preheat skillet or oven to 350°F if toasting croutons.
- In a large bowl, add kale and drizzle with lemon juice and olive oil. Massage for 2 minutes until tender.
- Toast croutons in skillet or oven if desired until golden and crisp.
- Add chickpeas, avocado, parmesan, and croutons to the kale.
- Drizzle Caesar dressing over the salad and toss gently to combine.
- Season with salt and black pepper to taste.
- Serve immediately with extra parmesan on top if desired.
