Ingredients

  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons ground cinnamon

  • 1 cup unsalted butter (softened)
  • 1 ½ cups brown sugar (packed)
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
  • 2 cups peeled and chopped apples
  • 1 tablespoon lemon juice
  • 8 oz cream cheese
  • 3 cups powdered sugar
  • 2 tablespoons heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
  2. In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another large bowl, cream butter and brown sugar until fluffy. Add eggs one at a time, mixing well. Stir in vanilla.
  4. Alternate adding the dry ingredients and buttermilk to the wet mixture. Fold in chopped apples tossed in lemon juice.
  5. Divide batter evenly between pans. Smooth the tops.
  6. Bake for 25–30 minutes or until a toothpick comes out clean. Cool in pans 10 minutes, then transfer to wire racks.
  7. Beat cream cheese until smooth. Gradually add powdered sugar and cream to make frosting.
  8. Frost cooled layers, then top and sides of cake. Slice and serve at room temperature.
