For the Brown Sugar Cinnamon Buttercream:

  • 1/2 cup unsalted butter, softened
  • 1/4 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 2 cups powdered sugar
  • 2 tablespoons heavy cream or milk (as needed for consistency)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla extract.
  5. Mix in apple cider and sour cream until just combined.
  6. Gradually add dry ingredients to the wet mixture, mixing until just incorporated.
  7. Divide batter evenly among cupcake liners, filling each about 2/3 full.
  8. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool cupcakes in pan for 5 minutes, then transfer to a wire rack to cool completely.
  10. For the frosting: In a bowl, beat butter and brown sugar until fluffy. Add cinnamon, vanilla, and gradually mix in powdered sugar. Add cream as needed for a smooth, pipeable consistency.
  11. Frost cooled cupcakes and garnish with a sprinkle of cinnamon sugar, if desired.
