Ingredients
Scale
- 4 flour tortillas (10-inch)
- 8 oz cream cheese, softened
- 4 oz canned diced green chilies
- 1 cup cheddar cheese, shredded
- 1/2 cup red onion, finely diced
- 1/2 cup bell pepper, finely diced
- 3 tbsp sour cream
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/8 tsp cayenne pepper
- Basil Pesto Sour Cream Dipping Sauce:
- 1/2 cup sour cream
- 2 tbsp basil pesto
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a medium bowl, mix together cream cheese, green chilies, cheddar cheese, red onion, bell pepper, sour cream, paprika, garlic powder, onion powder, and cayenne until smooth and well combined.
- Spread the filling evenly across each tortilla, leaving about 1/2 inch around the edges.
- Roll each tortilla tightly into a log and slice into 1-inch rounds.
- Place slices cut-side down on the prepared baking sheet.
- Bake for 12–15 minutes, until tortillas are lightly golden and filling is hot and melty.
- Meanwhile, prepare the dipping sauce by mixing sour cream and basil pesto in a small bowl.
- Serve warm antojitos with basil pesto sour cream dipping sauce.
Notes
- Use flavored tortillas (like spinach or tomato) for extra color and taste.
- You can make the rolls ahead, refrigerate, and bake just before serving.
- Adjust cayenne to your spice preference.
- Try Monterey Jack or pepper jack cheese instead of cheddar for variety.
