Description

Tender, buttery coffee cake with a crackly cinnamon sugar crown and a cozy swirl through the middle. Perfect with morning coffee or as a comforting anytime treat.

Ingredients

  • All-Purpose Flour: 2 cups
  • Granulated Sugar: 1 cup
  • Brown Sugar: 1 cup, packed
  • Ground Cinnamon: 2 teaspoons
  • Baking Powder: 1 tablespoon
  • Salt: 1/2 teaspoon
  • Unsalted Butter: 1 cup, softened
  • Eggs: 2 large
  • Milk: 1 cup
  • Vanilla Extract: 1 teaspoon

Instructions

  1. Preheat Your Equipment: Heat the oven to 350°F (175°C). Grease and lightly flour a 9×13 inch baking pan, or line with parchment for easy lift out.
  2. Combine Ingredients: In a large bowl, cream the softened butter with the granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla. In a second bowl, whisk the flour with the baking powder and salt. Add the dry mixture to the butter mixture in two additions, alternating with the milk, mixing just until smooth.
  3. Prepare Your Cooking Vessel: In a small bowl, stir the brown sugar with the cinnamon until evenly combined.
  4. Assemble the Dish: Spread half of the batter in the pan. Sprinkle half of the cinnamon sugar evenly over the batter. Dollop and spread the remaining batter on top, then finish with the remaining cinnamon sugar.
  5. Cook to Perfection: Bake for 35 to 40 minutes until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  6. Finishing Touches: Cool the cake in the pan on a rack for at least 15 minutes so the crumb sets and the topping becomes lightly crackly.
  7. Serve and Enjoy: Slice into 12 squares and serve warm or at room temperature with coffee or tea.

Notes

  • Note: Use room temperature butter and eggs for the fluffiest crumb.
  • Avoid overmixing the batter so the cake stays tender.
  • For a bakery finish, whisk 1/2 cup powdered sugar with 1 to 2 tablespoons milk and drizzle over the cooled cake.
  • Warm leftovers for 10 to 15 seconds in the microwave to refresh aroma and texture.
