Description

Golden crispy salmon bites cooked in the air fryer, served over fluffy brown rice with green beans and paired with a refreshing dill lemon sauce for the perfect easy dinner.


Ingredients

  • 1 pound salmon fillet, skin removed and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • 2 cups cooked brown rice
  • 2 cups green beans, steamed or blanched

Instructions

  1. Preheat your air fryer to 400°F for about 5 minutes.
  2. In a large bowl, toss the cubed salmon with olive oil, garlic powder, paprika, salt, and pepper until well coated.
  3. Lightly spray the air fryer basket with oil to prevent sticking.
  4. Arrange the seasoned salmon in a single layer in the basket, ensuring they aren’t overcrowded.
  5. Air fry for 8 to 10 minutes, shaking halfway through, until the salmon is crispy and golden.
  6. While the salmon cooks, mix Greek yogurt, chopped dill, lemon juice, and minced garlic in a bowl to make the sauce.
  7. Serve the salmon bites over brown rice with green beans, and top or dip with the dill lemon sauce.
