- 2 tablespoons fresh dill, finely chopped
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- 2 cups cooked brown rice
- 2 cups green beans, steamed or blanched
Instructions
- Preheat your air fryer to 400°F for about 5 minutes.
- In a large bowl, toss the cubed salmon with olive oil, garlic powder, paprika, salt, and pepper until well coated.
- Lightly spray the air fryer basket with oil to prevent sticking.
- Arrange the seasoned salmon in a single layer in the basket, ensuring they aren’t overcrowded.
- Air fry for 8 to 10 minutes, shaking halfway through, until the salmon is crispy and golden.
- While the salmon cooks, mix Greek yogurt, chopped dill, lemon juice, and minced garlic in a bowl to make the sauce.
- Serve the salmon bites over brown rice with green beans, and top or dip with the dill lemon sauce.
