- 1 cup roasted pistachios, shelled and chopped
- 1½ cups crispy rice cereal
- ⅓ cup honey or maple syrup
- 2 tablespoons coconut oil
- ½ cup dark chocolate chips, melted
Instructions
- Line an 8×8 baking pan with parchment paper and set it aside.
- In a saucepan, gently heat the honey and coconut oil until melted and just starting to bubble. Remove from heat.
- In a large mixing bowl, combine the crispy rice cereal and chopped pistachios.
- Pour the warm syrup over the dry mixture and stir quickly to coat everything evenly.
- Press the mixture firmly into the prepared pan using the back of a spoon or your hands. Refrigerate for 30 minutes.
- Melt the chocolate and drizzle it over the chilled bars. Refrigerate again for 10 minutes to set the chocolate.
- Lift the bars out using the parchment and cut into squares. Serve and enjoy.
